Rigatoni Alfredo Bake: Chicken Florentine Style

 Hey guys! My next recipe for you is one that will feed many (8-10 servings), but it might possibly disappear faster than you may think. I decided to making something with alfredo sauce, spinach and chicken... and this is what I got.

What you'll need:

-1-2 lbs. of chicken (preferably boneless tenderloins)
-1 package of Green Giant spinach (only going to use half)
-1 package of Rigatoni pasta
-1 package of cream cheese ( 8 ounces)
-1 6 ounce package of shredded or shaved parmesan cheese
-2 cups of milk
-1 stick of butter (1/2 cup)
-1 teaspoon of garlic powder.
-a pinch of salt
-a dash of pepper

Equipment:

-9 x 13 baking pan/dish
-medium sized sauce pan (for pasta and alfredo sauce)
-large mixing bowl
-2 forks
-cutting board
-wisk


First, boil the chicken for about 10 minutes or until it is cooked all the way through. Shred the chicken and set aside. Also, preheat the oven to 350 degrees.


Then boil the pasta and set aside.


Next, prepare the alfredo sauce. Melt the butter. Then, add the cream cheese and stir until the mixture becomes creamy. Add the garlic powder and slowly add the milk until it's thoroughly stirred. Then, add 3 ounces of the parmesan cheese to the mixture. Stir until the cheese has melted.


Keep stirring the alfredo sauce until it starts to thicken. Once it has thickened, remove from heat.


Next, prepare the spinach according to the directions on the package. Add half of the spinach into the alfredo sauce and stir until evenly distributed.




Combine the pasta, chicken and alfredo mixture into a large bowl. Stir until mixed thoroughly.


Then, pour the mixture into a 9x13 baking pan and spread out evenly. Then sprinkle the remaining parmesan cheese on top of the mixture. Put it in the oven and bake at 350 degrees for 10 to 15 minutes (or until the cheese is melted and food is warm).


And this is what it looks like when it comes out of the oven!


Look at that beautifully melted cheese... yummm!!


And here is how the money breaks down. I bought the spinach BOGO so it was really only a dollar. The chicken at Publix is always on sale so, it could be cheaper. Also, it could be cheaper depending on the type of chicken you buy. Also, pasta at Publix is usually BOGO every week, so you can always stock up on pasta for half the price. And, this yields about 8-10 servings. You can definitely half the recipe and half the price.
